Summary: The production of banana cultivars Musa AAB, represents the most significant agricultural item in our country, however there is no scientifically validated information on banana snack preferences. At the country level, ex-ports to international markets such as Snack have increased due to the availability and accessibility of the raw material and low requirements for the industrialization of the fruit. The methodology used in the development of the project was participatory, bibliographic, statistical, through surveys conducted with consumers and vend-ing centers. As a result, it was obtained that 86% of the citizens surveyed consume green and ripe banana snacks, being the natural flavor preferred by 81%, which indicates that banana-based products have good possibilities for business development
